Wash and dry your romaine lettuce. We usually use 2 leaves together for each wrap, one large and a smaller one on top. Add a layer of hummus down the middle of romaine hearts, it’s ok to spread a little out toward the edges if you like. Layer first with cucumbers, carrots and then tomatoes. Add cilantro, cheese of your choice, salt and fresh cracked pepper.

Remember how just a few months ago Hyderabad almost ran out of water? That is still our imminent future. At least 21 cities in India including Delhi, Bangalore, Chennai and Hyderabad WILL run out of ground water in 2020 (literally less than 2 months away)! Going forward, we can either keep talking about the all the million reasons we are running out of water, or we roll up our sleeves and improvise..and that’s exactly what we are doing!
At Urban Kisaan, we are conserving about 95% of water using hydroponic technology compared to a regular farm. Now there are still a lot of prominent steps that need to be taken to completely tackle water crisis in India...let’s just take this baby step for now!
It’s almost winter! We aren’t quite sure it qualifies as sweater weather yet but it sure does call for a warm cozy bowl of Spinach soup! 🌱

1. Melt the butter in a saucepan and sautee the onion till translucent
2. Add in the garlic and cook till it starts to brown.
3. Add the spinach, stock cube and half the water
4. Cover and cook till the spinach wilts
5. Blend in a blender
6. Run through a fine sieve and add water depending on how thick you like the soup
7. Bring to temperature, turn off the heat and add the cream.
8. Serve with fresh pepper and toasted nuts on top.
