Festive VEGETABLE + TOFU PAD THAI. This is the perfect dish when you are wanting something super flavorful, but tired from a long day at work or school. You can also swap out the veggies with whatever you have in your fridge. I chose festive red and green veggies (because it’s that time of year!), but carrots, bean sprouts, etc. would all be amazing in this dish. — [Ingredients] 2.5 Tbsp lime juice 2.5 Tbsp tamari 3.5 Tbsp coconut sugar 2 Tsp fish sauce (sub with veg fish sauce for vegan recipe) Pinch of red pepper flakes 1 Tbsp sesame oil 1 cup cubed extra firm tofu, dried 1/2 cup corn starch 1/4 tsp salt 1/4 tsp pepper 1 cup red bell pepper, chopped 1 cup snap peas, chopped 1/2 cup green onions, chopped 1/3 cup roasted and salted peanuts, chopped 8 oz Pad Thai rice noodles 1/4 cup cilantro, chopped — [How it’s made] 1. In a small saucepan over medium heat add the lime juice, tamari, coconut sugar, fish sauce, and red pepper flakes. Heat for about 30 seconds or until everything is melted and combined. Remove from heat. 2. Press and dry and tofu and cut into 1-inch cubes. 3. Mix the corn starch, salt, and pepper in a small bowl. Toss the cubes of tofu until all evenly coated. 4. Heat a large pan over medium heat and add the sesame oil. Cook the tofu on all sides until golden and crispy. Transfer to paper towel lined plate to cool. 5. Prepare the Pad Thai noodles per the package instructions and drain. 6. In the same pan used for the tofu, reheat over medium heat. Add the bell pepper, snap peas, peanuts, and green onions and cook for a few minutes or until just soft. Stir in the noodles and sauce. Cook for about 3 minutes or until everything is warmed through and the sauce is thickened. Remove from heat and stir in the cilantro. I finally got to cook something at home today since we are technically done with classes. I didn't make the Donkatsu from scratch. It was a frozen product I picked up for 50% off when the Fairfax Hmart was closing and moving to a new location. I will say this, I am never going to buy premade ones again. Esta noche en la versión Late 🌚📺 de “Recetas de amor para cambiar el mundo 💪🏼💚🌎” en respuesta a algun@s que me preguntaron curiosos... les quise mostrar esta curiosa Sal de Color Negro 🖤 llamada Kalah Namak, alta en azufre, que le da un sabor idéntico al huevo a nuestros platos!!! de verdad es igual 🤭, es como oler y probar un huevo, al probarlo me y se han sorprendido muchísimo 😲🤗 Lo único que necesitan es Easy Egg, lo encuentran en emporios Vegan o Supers (prefieran siempre las Pymes cabres 💪🏼♥️🇨🇱) y Sal Negra 🖤, yo la encontré en Curauma, en la tostaduría @tostaduriatremo 👈🏼 pero en Santiago también hay, sólo hay que buscar en La Vega, el lugar donde todo lo encuentras y barato 😍👌🏼! En una taza grande mezclan 50gr de Easy Egg con 240 ml de agua, revuelvan bien para evitar los grumos! Luego calientan la paila con una cdta de aceite de oliva y van tirando la mezcla de a poco y dándole forma a los “no huevos” 👌🏼😁, así como muestro en el Video 🎬! A mi me gustan con 🍅 así que les agregué! Y algo muy importante para mí por lo menos, porque he descubierto que así el sabor es más intenso y por ende más parecido, es ponerle la sal al final, espolvoreada con un salero o nuestros dedos 👌🏼! Queda increíble 😍 Los amamos aquí en la casa desde que los descubrimos ♥️ Lo muy positivo es que tienen un muy bajo impacto ambiental, porque todo lo que comemos tiene un impacto en el planeta que tenemos que urgentemente salvar y además importantísimo, liberamos a la gallinitas de sus jaulas 🐔😢 o de modificaciones genéticas antinaturales para ellas 💪🏼💚🌎! I’m starting to feel really good again and things are finally becoming a bit more “effortless”. I have stopped tracking my food (because I started again to “keep me on track” but I was just tracking that I was overeating 🙄) and I think I’ve found something that seems to really help...⁣ ⁣ The past 2 weeks I’ve been doing a bit lower intensity workouts mostly because my knees were really bothering me and I was waiting to get in for my acupuncture appointment. But I noticed during this time that although I was still working out with lower intensity cardio such as walking, elliptical or stair master, and doing more weight based exercises, my appetite went back to normal. I was no longer dying for snacks after eating my lunch or eating everything in sight while waiting for my dinner to be done cooking. It has only been a week so who knows if maybe it was something else 😂 but I’m going to keep trying this out with only a few higher intensity workouts in the week rather than everyday and see how that works for me ☺️

Super happy camper right here! Pot roast in the crockpot all day and instead of potatoes.... RADISHES! Not a fan of radishes in general, but these are amazing! They taste like baby potatoes! And almost no carb gravy! This is one happy house! My not keto peeps are devouring it, so this will definitely be made again! . Gravy: 4 tbsp butter 1 cup drippings 2 cups of broth *we used chicken 2 tsp Worcestershire sauce 1 tsp garlic powder Salt to taste Pepper to taste 1/2 tsp xanthan gum - Melt butter in a pan on medium heat. slowly add drippings and broth; whisk until smooth. Bring to a boil, then add Worcestershire, salt, pepper, and garlic powder. Reduce heat and let simmer for 10 minutes. Add xanthan gum and whisk. Simmer for another 5 to 10 minutes until gravy starts to thicken. Gravy will get thicker as it cools. If gravy is too thick, add a little broth as necessary. Here is the recipe👇🏼 🤩RECIPE: Mushroom & Pumpkin Risotto with Crushed Walnuts Ingredients: Makes 4 serves  2 Tbs Extra Virgin Olive Oil  5 garlic cloves  1 cup sliced mushrooms 1 litre vegetable stock  2 cups brown or aborio rice 3 Tbs nut butter of choice (works well with cashew butter) 1 cup diced pumpkin  2 cups shredded baby spinach  4 sprigs of thyme 1 cup crushed walnuts . Method: 1. In a large pot, heat 1 tbs oil and sauté garlic. Add mushrooms and cook for further 5 minutes.  2. Add vegetable stock and rice and cook until the rice has fully absorbed all the liquid. Stir through nut butter. 3. In a separate pan, heat remaining oil and cook pumpkin until soft. Add to risotto mixture. 4. Stir the baby spinach, thyme and half of the walnuts through the risotto.  5. Fried apples and pears . . Recipe 1 Apple 1 Pear (soft) 1 tsp ginger 1 tsp cinnamon 1 tsp nutmeg 2 TBSP brown sugar 1 TBSP butter . . . Direction Cut the apple and pear into chunks. Put the butter in a pot, add your sliced fruits, and the remaining ingredients. Let it boil for 5 to 10 minutes until the apple softens. Serve warm with whip cream. Ever make your own aioli? It’s actually really easy, super delicious, and will never hurt you . Start by whisking together three egg yolks into a bowl with half a lemon’s juice and about a teaspoon of Dijon mustard. Drop by drop, start whisking in the EVOO until it looks thickened/emulsified. Now you can whisk in the EVOO with more of a steady stream – you’ll use about a cup and a half of EVOO. If it gets too thick, whisk in a few splashes of agua. Add three, lightly smashed garlic cloves and a pinch of salt to the bowl and let it hang out in the fridge for about an hour so the garlic flavor can infuse. Au menu ce soir, gratin facile et léger (sans pâte ) de poireaux et carottes et sa salade d'endives aux noix... pour rester dans les légumes de saison. J'aime beaucoup les gratins à la sauce béchamel relevée de poivre gris ou noir. Mais je n'avais pas trop envie de cuire la sauce ce soir 😀 alors on prend un bol et hop c'est parti pour un appareil à flan. Vite fait ! Pour 2 personnes : 300 g de légumes nettoyés (2 poireaux fins et une petite carotte), 2 oeufs, 1 cs rase de farine, un petit verre de lait (150cl), une cc de graines de nigelle (cumin noir),1 pincée de noix de muscade râpée, sel poivre du moulin. 2 pincées de gruyère râpé (20 à 30g). Mélanger les ingrédients de l'appareil dans l'ordre indiqué en fouettant. Verser sur les légumes dans un plat allant au four. Saupoudrer de gruyère. Cuire au four 30 min au milieu ou un peu plus haut sur la grille à 210-220°C (th. 7). Mon conseil nutrition: vérifiez sur l'étiquetage du gruyère qu'il n'y ait pas de pomme de terre ajoutée sinon vous n'aurez pas autant de protéines aimales. La salade d'endive : 1 petite ou 1/2 endive, 1cc de vinaigre de pomme, 1cc d'huile de noix ou de colza ( riches en acides gras oméga 3) et une noix en morceaux. Sel ( peu ou pas), poivre du moulin. Ce plat apporte une bonne portion de légumes riches en fibres, vitamines et minéraux, une portion de calcium (gruyère râpé et lait ), une petite source de protéines (10g env). Il peut être consommé seul le soir par exemple avec une petite salade (roquettte, choux, mâche) ou une ou 2 clémentines, et une tranche de pain aux graines de lin par exemple selon votre appétit. A midi on peut rajouter une tranche de jambon (decouennée & dégraissée ou de dinde/poulet selon nos besoins ) ou une saucisse de strasbourg (ou de volaille), par exemple ou une petite portion de viande de volaille ou autre peu grasse, poisson blanc (maigre) ou un oeuf. Mezcla las espinacas con los corazones de alcachofa picados, la crema, sal de ajo y sazona con sal y pimienta. 2. Coloca una capa de láminas de lasagna, después una capa de mezcla de espinaca y cubre con queso. 3. Repite la operación. 4. Hornea hasta que la pasta esté cocida.
