It’s so funny seeing how ideas about what’s good/bad or healthy/unhealthy are. This is as funny as some of the crazy diets & pills I hear people try to lose weight.
My 2nd attempt at Keto/no sugar cheesecake. Much improved! Still need to work on my crust...But pretty great for about 5 carbs a slice. 😋
Pre-heat oven to 325F. Middle rack. Put large long Pyrex filled with some water in the bottom oven rack to keep cooking temp even.
Take 1/2 cup walnuts and 1 cup almond flour and maybe a stick of soft butter and pulse in a processor. Put on the bottom of a 9” Spring form pan covered in a parchment paper round and bake @350 15-20 min. Cool. Wrap outside of pan with foil and spray inside of ring lightly with pam or lightly wipe with soft butter.
In a large mixing bowl, beat 6 8 Oz packages of room temperature cream cheese with mixer until fluffy (use the paddle attachment). Slowly Add in 2 cups powdered Erythritol a little at a time.
Mix in 5 room temperature eggs one at a time.
Add 1 tbsp vanilla and 8 oz room temperature sour cream and beat until just incorporated.
Over-beating the mixture or drastic cooking temp changes will cause cracks in the cake top.
Pour the cheesecake mixture onto the crust. Bake in pre-heated oven. Check after 50 minutes, might take up to 85 minutes. Center should still be a bit jiggly.
Turn off the oven and crack the door. Let the cheesecake sit in the oven for 60 minutes. Remove the cheesecake from the oven run a knife between the cheesecake and the pan. Do not remove the springform. Let sit on the counter for 1 hour.
Cover loosely and refrigerate for at least 8 hours, over night is best. Take out 30 minutes prior to eating, remove form and decorate with fruit and whipped cream.
When I go to the gym and I see people bigger than me it gives me inspiration and motivation. They are trying so hard to change their lives and it makes me happy to see bigger people at the gym. All of our journeys start somewhere and whether your small or big, doing something to improve yourself is the most important thing to feeling healthier and happier. Dont judge someone else because of where they are right now just see them going to the gym doing what you are doing! I applaud every person at the gym because HERE THEY ARE and HERE I AM. We may be at different stages of our journey but we need to support each other and make everyone feel comfortable when theyre trying to improve themselves. There are even some people who will see really thin girls at the gym and say "why are they here theyre already skinny they should go eat a burger" and that is a 100% unacceptable thought process. We should never body shame anyone no matter how big or how small they are.
