It is simple enough for weeknight meals yet fancy enough for a dinner party meal. It is made with the simplest of ingredients and tastes even better the next day! Serve over Egg Noodles or Mashed Potatoes : : : : : 4 boneless skinless chicken breasts cut into 2 long strips (seasoned with salt, pepper, smoked paprika and onion powder) 1 large onion sliced thin 3 cloves garlic sliced 10oz mushrooms sliced 3 tbsp butter 3 tbsp flour 3 cups beef broth 2 tbls Worcestershire sauce 1 tbsp Dijon 3 springs fresh thyme 1 cup sour cream 1/4 cup fresh chopped parsley * Heat 2 tbls oil in a large skillet over medium heat. Add chicken and cook for 4 minutes until golden. Turn and cook for 3 minutes more or until cooked through. Remove from skillet to a plate. Add butter then add onions, garlic and onions and cook until golden. Add flour and cook, stirring for 1 minute until flour is absorbed. Add the broth scraping up all the bits at the bottom of the pan. Season with salt and pepper. Add Dijon, Worcestershire, sour cream and fresh thyme and whisk to combine. Bring to boil and reduce to simmer for 3-4 minutes. Nestle chicken back into pan along with any accumulated pan juices and let cook together for 2-3 minutes. Yoga poses My shoulders are killing me. My pinched nerve is flared and is hurting my back, shoulders and neck. My nutrition and movement keeps everything mostly managed but every once in a while it decides to flare for fun lol. Doing yoga helps me streach the muscles out and it feels good. I desperately wanted to dominate a Culver’s deluxe burger on my way home tonight. ... Like hard core craving a greasy cheesy butter burger. I haven’t had Culver’s nor had any desire for it for over 6 months. In the past I would always just give in without a second thought. I’m not against indulging, I feel like I’ve been pretty clear on that. HOWEVER, this was not me wanting to indulge in something I love for the joy of it. I don’t like meat and most dairy gives me indigestion. This was a past coping mechanism kicking in aka stress eating. I was feeling overwhelmed and BAM craving. As soon as I took a few minutes to sit with the feeling and ask myself what it really was about, I was able to identify it, label it and make a different choice. I’ve worked far too hard these past 5+ months to fall back into old patterns. I ended up eating a black bean burger and feel completely satisfied and so thankful my guts aren’t rolling from eating a butter burger. 👍 What helps you avoid cravings you know won’t serve you??#feelingthankful

EMOTIONS 🥶 😔 ☔️ The somber emotions of fall and winter causes stress and anxiety and many of us reach for almost anything to alleviate feeling meh. . Some things to watch for: ☕️ having more caffeine during the day can lead to poor sleep and further the cycle of fatigue, low energy, and comfort food cravings (salt, sugar, fat) 🍻the same goes for alcohol. It may help you fall asleep, but it will not improve sleep quality 🍕often we crave rich foods because we under season our own cooking. If you don’t add salt during the cooking process, your food will be on the bland side and, thus, less satisfying. . Start there and if you’re still battling cravings, it may be time to hit me up and investigate nutrient deficiencies!

Amo las lentejas, desde que decidí dejar de cocinar con carne han sido las más protagonistas en mi cocina, las uso para todo: bolañesa, picadillo, las guiso y las pongo en tacos, en fin, mil cosas y nunca imaginé que también podía germinarlas y ahora es de mis cosas favoritas! ✨ Aparte que se me hace un proceso súper lindo y es demasiado fácil, que todos lo pueden hacer! Y le da más versatilidad a las lentejas, las puedes guisar con muchas verduras o en una salsa, las puedes poner en una ensalada, sobre un pan con aguacate o hummus, tienes una infinidad de opciones para experimentar. Y no sólo son deliciosas, también tienen muchos beneficios, al germinarlas se vuelven más fácil de digerir y aumenta su contenido nutricional 🌱 Aquí van los pasos para germinarlas: 1. Dejar remojar las lentejas (la cantidad que tú desees) en un frasco durante la noche, es importante considerar que el volumen de las lentejas va a aumentar. El frasco lo debes tapar con un pedazo de tela y lo aseguras con una liga. 2. Por la mañana, descartas el agua (puedes regar tus plantas) y las enjuagas y las vuelves a dejar remojando en agua otro par de horas. (Debes dejarlas en lugar donde no les pegue el sol directo) 3. Por la noche, vuelves a colar el agua y enjuagar y listo, las dejas así para que empiecen a germinar. Tardan entre 1 y 2 días. 4. Durante estos días que están germinando es muy importante estarles dando ventilación, yo shakeo el frasco un poco y una vez al día las enjuago con un poco de agua. 5. Et voilá! Ya tienes lentejas germinadas y te las puedes comer en cualquier momento, las puedes guardar en el refri y se conservan como por una semana 💛✨

I’m telling myself to WAKE UP! My body has never betrayed me and I will love it for all it has done. My body has lived and loved, walked down an aisle to my Prince Charming, carried my darling son, held loved ones, traveled exotic places near and far, and has been my home for almost 32 years. We only have one body and one life! You don’t have to feel hate, disgust, embarrassment (or insert other negative adjective) towards your beautiful body.
