Beyond Szechuan cuisine`s spicy dishes, one thing you`ll notice is their love of cold, vinegary, crunchy veggies or pickles in between bites of their heartier stuff. Spicy smashed cucumbers is a humble and fond example, and hands-down one of my family faves! 🥒 Smashing the cuke, before chopping (I swack with the bottom of a pot) help pieces rapidly absorb the flavour of the spicy vinaigrette (Szechuan peppercorns, chilies, soy sauce, rice vinegar, sugar and sesame oil) and loads of garlic! With this hottt 🔥 weather upon us, this kind of cooling full-on-flavour side will be gracing my table many-a-nights! Spicy, Sour, Sweet and Salty and a whole lotta crunch!! So refreshingly deeelish! 🤤. Ohhhh Yeahhhh!!! Search recipe on my blog link under my bio.
Did You Know... seedless cucumbers are made of 90% water and an excellent source of vit C, dietary fibre, magnesium, potassium and silica? Great for the skin, detoxifying the body and for weight loss too. As a beauty regime refresher, I use cucumber slices over my eyes for tired puffiness. Benefits for inside and out!
